Chipotle, Cinnamon, and Classic Toffee: Toffee keeps really well in the refrigerator. If you leave it out at room temperature, it can tend to get “soft”. You can keep it fresh in the fridge for at least 30 days. I have tested it to 2 months and it still tastes great!
Peanut Brittle’s biggest enemy is humidity. Keeping it in an air-tight container is key. I find that it also does very well in the refrigerator, sealed tight.
The Salted Caramels need the most care in storage. Because I use no preservatives, they will crystallize at room temperature after several days. This is a natural reaction to the Maldon Sea Salt that is both in and on top of the caramels. If you keep them in the refrigerator, this will not happen. Just make sure and take them out of the fridge a couple of hours before serving so they will soften.
